One Bowl Pumpkin Ricotta Cookies

It’s that time of year where its officially acceptable to start sprinkling pumpkin pie spice all over anything that crosses the threshold of your kitchen, including these one bowl pumpkin ricotta cookies! I am starting off with the obvious choices like pumpkin sweets and pumpkin breakfast foods, but quickly moving on to some savory pumpkin dishes soon.

Like I said, I am starting off with all the sweet pumpkin goodies including these pumpkin ricotta cookies. I got the idea for these cookies when I looked in my fridge and saw some extra ricotta (always full fat!) sitting inside my fridge. Anyone else have the problem where you buy an ingredient for just one recipe and you’re stuck finding ways to use it for the rest of your life!? Luckily ricotta is delicious on most things including in cookies!

Every time I cook something new I have a fear that it only tastes good to me. This is not really a problem with savory foods like meats, pastas and pizzas. You know when its gooooood, but with healthy baked goods it can sometimes be a tossup and definitely has to do a lot with personal preference. I LOVED these cookies as soon as I made them. They were fluffy, but moist at the same time and had the perfect level of spice from the seasonings.

Thankfully, when I gave them to my taste tester and she felt the same way I did. Which means they are ready for the blog to share with all of you!! I rarely have the turn around time of making the recipe one day and sharing it the next, but that’s just how good this was: next level delicious! This recipe is so easy and you can make it in just one bowl for easy clean up. So get out your pumpkin spice and get to cooking.

Yield: 14 cookies

One Bowl Pumpkin Ricotta Cookies

prep time: 10 minscook time: 20 minstotal time: 30 mins

ingredients:

  • 1 egg
  • 1/4 cup pureed pumpkin
  • 1/4 cup whole milk ricotta
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1 3/4 cups almond flour (the one I used)
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp pumpkin pie spice (the one I used)

instructions:

  1. Preheat oven to 375F
  2. Combine egg, pumpkin, ricotta, maple syrup and vanilla in a large mixing bowl. Mix until smooth.
  3. Thoroughly mix in salt, baking soda, and pumpkin pie spice
  4. Slowly fold in the almond flour with a rubber spatula until all clumps are gone.
  5. Using a tablespoon or an ice cream scoop, scoop dough onto a lined baking sheet.
  6. Bake on middle rack of the oven for 10 minutes. Remove the tray and bang down to flatten cookies. Return the cookies to the oven for an additional 10 minutes.
  7. Remove from oven and allow to cool before enjoying!
