In the summer I want every day to end with some sort of appetizer outdoors and this melon pico de gallo with some chips just made its way to the top of my rotation. I’ve never met a salsa I didn’t like, but there is something about the fruit salsas that just scream summer.

I tend to go for the mango habanero salsa at a local market, but this homemade melon pico de gallo was so easy to throw together that it might be my new summer go to. I made this with a few simple ingredients from Sprouts Farmers Market in less than 20 minutes.

When I think summer the first melon that comes to mind is watermelon. Quickly followed by cantaloupe and honeydew melons. This salsa is made with the Athena melon.

I was inspired to jump outside of my melon comfort zone because of Sprouts Melon Mania. Sprouts has tons of different melon options available for you to try in their produce section. Next trip I definitely want to pick up a mini watermelon because they are so small and perfect.

I paired my Melon Pico de Gallo with Sprouts Organic Blue Corn Tortilla chips with Sea Salt. One reason why I love Sprouts is because o their private label products. I know that anything with the little Sprouts logo on it will be made with high quality ingredients and will be delicious!

This Melon Pico de Gallo is obviously great with tortilla chips, but could certainly be paired with many other things. I cannot wait to try it on tacos or with some spicy grilled fish or shrimp!

It could not be easier to throw together this Melon Pico de Gallo. Basically all you need to do is gather and chop your ingredients. Toss them in a bowl and allow the flavors to combine with the lime juice and salt.

When I make salsa I like to let is sit for a few minutes and then I taste it again. That way all of the flavors have combined and I can see if I need to add more salt.

Melon Pico de Gallo

ingredients:

  • ¼ Athena Melon
  • 2 medium tomatoes
  • ½ a jalapeno
  • ¼ large red onion or ½ small red onion
  • ¼ cup lime juice
  • ¼ cup chopped cilantro
  • Sea salt to taste

How to cook Melon Pico de Gallo

  1. Cut Athena melon in half and scoop out seeds. Cut into quarters and cut one quarter of the melon into small cubes
  2. Cut tomatoes into quarters and scoop out seeds – this is not required, but I prefer my salsa seedless
  3. Cut tomatoes into small cubes
  4. Dice red onion and jalapeno and place in a small mixing bowl
  5. Squeeze lime juice and salt onto the onion and jalapeno and mix thoroughly
  6. Fold melon and tomato into the onion and jalapeno mixture
  7. Mix in chopped cilantro and taste. Add more salt if needed
  8. Enjoy with tortilla chips or on tacos!
