I make these grilled sweet potato wedges with a flavorful spice blend so they are truly delicious on their own, but with the mixed herb dressing they are really spectacular. To make this herb dressing I went out to my herb garden and picked whatever looked good to me! That happened to be a little basil, cilantro and flat parsley.

You can basically use whichever fresh herbs you have or look best to you at the time. My favorite herb is flat parsley so if you only want to choose one that would be a good one to pick! Alternatively you could do some dill and lemon juice and leave the spice out.

Grilled Sweet Potato Wedges with Mixed Herb Dressing

ingredients:

Sweet Potatoes
  • 2 medium-large sweet potatoes
  • 1/4 cup avocado oil
  • 1 tsp salt
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1/4 tsp cinnamon
Mixed Herb Dressing
  • 1/4 cup fresh herbs of choice - like cilantro, basil or flat leaf parsley
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp crushed red pepper

How to cook Grilled Sweet Potato Wedges with Mixed Herb Dressing

  1. Slice sweet potatoes into wedges
  2. Combine spices thoroughly in a small bowl and pour avocado in a small bowl as well
  3. Place cut sweet potato wedges on  a baking sheet or large plate and brush on all sides with avocado oil using a food brush
  4. Sprinkle spice mixture evenly on all sides of the swee potato wedges
  5. Preheat the grill to medium-high heat and ensure the grill is clean
  6. Place the sweet potato wedges on the grill 
  7. Close the grill and leave them to cook for about 6 minutes
  8. Flip the sweet potato wedges, close the grill and allow them to cook for an additional six minutes
  9. After those 12 minutes if the sweet potatoes are very soft you are ready to eat, if they don't seem soft enough, place them on the top rack and close the lid for an additional 5 minutes
  10. After the sweet potatoes are cooked, prep the herb dressing by chopping fresh herbs and mixing in a small bowl with extra virgin olive oil and crushed red pepper
  11. Drizzle this dressing over the sweet potato wedges and enjoy!
