Grilled Ginger Lime Chicken
If you’re one of those people who thinks grilled chicken is boring, you might think again once you try this grilled ginger lime chicken. This simple and healthy grilled chicken recipe is packed with tons of flavor, but the flavor is subtle enough that you could pair the chicken with almost anything to make a meal.
When I first made this chicken I had it on salads, sandwiches, and in quesadillas. Then when I had to test it again I found even more ways to enjoy this chicken. I particularly liked having it with some baked sweet potato fries.

Let’s face it, there is usually at least one picky eater in every group and if you’re having a barbecue this grilled ginger lime chicken can be your go to option for the picky eater. You don’t even have to tell them its ginger lime flavored, just tell them its grilled chicken. Not saying its bland, but its perfect for that person who “only eats chicken.”
I used coconut aminos instead of soy sauce to make the marinade Whole30 compliant, but if you are trying to keep costs low and don’t need to avoid soy, regular soy sauce will work just the same. While I am on the topic of substitutions, I recommend using fresh ginger and garlic, but if you can’t, you can substitute with a teaspoon of each item in the ground spice form.
This grilled ginger lime chicken goes along so well with the fresh flavors of summer. Could be just me, but when its hot out, my intake of fresh fruits and veggies goes way up. This chicken compliments a fresh strawberry salad or could be used for a quick chicken burrito bowl.

I have this grilled ginger lime chicken for a quick and simple lunch combo that I could probably eat on repeat. Below you will see the simple plate of sliced chicken, crispy sweet potato fries and some Carolina barbecue sauce for dipping. The best part is this healthy, simple meal is Whole30 approved including the sauce!
To make this grilled ginger lime chicken prepare the marinade one hour prior to grilling. Mince the garlic and ginger and mix with coconut aminos, lime juice, avocado oil and fish sauce. Place the chicken in a bowl with the marinade and toss until chicken is well covered.
Cover bowl and place chicken in the refrigerator to marinate for at least 1 hour. Preheat the grill to high heat. Be sure to clean grill prior to heating. Place chicken on the hot grill and discard excess marinade.
Cook for 12 minutes in a closed grill, flipping the chicken every 3 minutes. Enjoy immediately or store in the refrigerator for up to 4 days. You can find the full recipe below.
