Green Dream Dressing

When I lived in Atlanta in the summer of 2015 my roommate and I would make a dressing like this nearly weekly. It is PERFECT for a kale salad, but will make any salad pop. That is why it is truly the dressing of my dreams. The recipe makes enough for more than a weeks worth. I store mine in a squeeze bottle so that its prepped and ready to go whenever I need a squeeze.  **it is important to use a high speed blender for this recipe in order to get it nice and smooth and creamy.

Yield: 1 cup dressing

Green Dream Dressing

My go to dressing. Makes every salad POP!


  • 1 Medium Shallot Roughly Chopped
  • 1/2 Cup Loosely Packed Parsley Leaves
  • 2 tbsp Lemon Juice
  • 1/2 Cup White Wine Vinegar
  • 1 tbsp Dijon Mustard
  • 1 tsp Salt
  • 1/4 tsp Black Pepper
  • 3/4 Cup Extra Virgin Olive Oil


  1. Place all ingredients except olive oil in a high-speed blender
  2. Blend on high until all ingredients are well combined
  3. Reduce speed to medium-low and while blender is running slowly pour in a steady stream of olive oil
  4. Store dressing in refrigerator and shake well before each use
