Grain Free Baked Chicken Nuggets

If you follow me on Instagram you might have noticed that I have been trying to simplify my meals and my recipes. It has been such a fun challenge to see how I can eliminate ingredients and still make delicious recipes. I've got this one down to just 6 simple ingredients!!


Grain Free Baked Chicken Nuggets


  • 2 Chicken breasts 
  • 1 egg
  • 3/4 cup almond meal - not almond flour
  • 1/2 tsp garlic powder
  • Pinch of Salt and Pepper


  1. Preheat oven to 400F and line a baking sheet with parchment paper.
  2. Cut chicken breasts into nugget size pieces. 
  3. Beat egg in a bowl and combine almond flour, garlic powder, salt and pepper in a shallow bowl.
  4. Bread chicken nuggets by dipping in the egg and rolling in almond flour mixture, coating all sides.
  5. Place on a baking sheet without nuggets touching one another. Bake for 15 minutes. Flip nuggets and bake for another 10 minutes.
