Grain Free Sweet Potato Gnocchi

Cauliflower as a pizza crust? Decent! put a bunch of cheese in that and I am GOOD TO GO.

Cauliflower in a smoothie? SURE! I can mask that ish with lots of berries.

Cauliflower in my gnocchi? NO WAY. Makes it gummy and unpleasant.

When I think of gnocchi I think of puffy little clouds that combine two of my favorite things: potatoes and pasta. So when everyone jumped on the Trader Joe's Cauli gnocchi train I was happy to jump right in. Turns out I wasn't a fan and their recipe STILL had potato starch in it. This recipe only has 3 simple ingredients. It is grain free, dairy free and nightshade free and completely delicious. The ingredients i used were Japanese sweet potato, cassava flour and egg, but you can definitely use a standard sweet potato.

Grain free sweet potato gnocchi is made with 3 simple ingredients: sweet potatoes, egg and cassava flour. It is gluten free, dairy free, nightshade free, paleo pasta.
Yield: 4 Cups Cooked Gnocchi

Grain Free Sweet Potato Gnocchi

ingredients:

  • 1 large Japanese sweet potato
  • 1 Egg
  • 3/4 cup Cassava Flour

instructions:

  1. Peel the sweet potato and chop into large cubes.
  2. Steam the cubes until soft enough to pierce easily with a fork.
  3. Allow the sweet potato to cool and mash thoroughly with a potato masher.
  4. Pour the potato onto a cutting board and make a little hole in the middle.
  5. Crack an egg into the middle, whisk with a fork and mix thoroughly into sweet potato.
  6. Pour cassava flour on top and knead slowly into the sweet potato and egg mixtures.
  7. When flour is thoroughly mixed in roll into a ball shape.
  8. Add a sprinkle of cassava flour on the workspace and a sprinkle on the dough ball.
  9. Cut the dough into 8 equal pieces.
  10. Take one piece and roll into a long 1/2" diameter tube and slice into 3/4" to 1" pieces. Roll pieces on a gnocchi board or up and down a fork.
  11. Repeat this process for the remaining seven pieces of dough.
  12. Boil water and add gnocchi when water is boiling. When the gnocchi floats to the top of the pot, remove with a slotted spoon. Cook in batches if you are using a small pot.
  13. To store gnocchi at this point, rinse with water and toss in olive oil. Store in refrigerator for up to 5 days.
  14. To eat immediately brown over medium high heat in a non stick pan with a little oil or butter or ghee. Once browned add your favorite sauce to the pan!
