Occasionally I will get a recipe idea in my head and it will stick there and bother me until it is made. A few weeks ago I was craaaaving some lemon poppy seed muffins and knew that I needed to make my own. Ever since Whole30 I have been trying to avoid grains as much as possible. So I made a grain free lemon poppy seed muffin with a lemon glaze that definitely cured all of my cravings!

To make grain free baked goods like these grain free lemon poppy seed muffins I like to use almond flour because I think it gives baked goods the best possible consistency. The only problem with using almond flour for baked goods is that they can end up super dense. To make my lemon poppyseed muffins fluffy while still using almond flour I separate the egg yolks and whites. I whip up whites until they are fluffy and almost stiff. The fluffy egg whites add rise to the muffins as they bake.

It might look like a lot of steps or ingredients, but it really is not too hard to put together these delicious, fluffy muffins. The most important kitchen tool you need to make these is a hand mixer. This is a tool that I added to my kitchen instead of getting a large stand mixer and I am so glad that I have it.

To make these grain free lemon poppy seed muffins combine the egg yolks with wet ingredients and then dry ingredients. Fluff the egg whites with a hand mixture and slowly fold them in with the rest of the batter. Then mix in poppy seeds and lemon zest and bake the muffins. Allow the muffins to cool after cooking and then dip them in a lemon glaze and top with more lemon zest. These grain free lemon poppy seed muffins are so delicious. Grain Free Lemon Poppyseed Muffins

ingredients:

Muffins
  • 4 eggs
  • 1/4 cup almond milk
  • 3 tbsp lemon juice
  • 1/4 cup melted ghee
  • 1 tsp vanilla extract 
  • 1 1/2 cup almond flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1/2 cup coconut sugar
  • 2 tbsp poppy seeds
  • 2 tsp lemon zest
Glaze
  • 1/2 cup powdered sugar
  • 1 tbsp lemon juice

instructions:

  1. Preheat oven to 375F and line a cupcake pan with liners
  2. Separate egg whites and egg yolks and place each in  a large mixing bowl
  3. Add almond milk, lemon juice, ghee and vanilla extract to mixing bowl with egg yolks and combine with an electric hand mixer
  4. Add almond flour, baking soda, baking powder, baking soda, salt and coconut sugar to the bowl with wet ingredients and beat with a hand mixer until fully combined
  5. Place egg whites in a separate mixing bowl. Mix with a hand mixer until soft, white, fluffy peaks form
  6. Slowly fold fluffy eggs whites into batter with a flat spatula
  7. Once egg whites are folded in, mix in poppy seeds and lemon zest
  8. Fill each of 12 slots in a cupcake pan 2/3 of the way full with batter
  9. Bake at 375F for 25 minutes
  10. Remove from the oven and allow to cool
  11. Prepare glaze by combining powdered sugar and lemon juice
  12. Dip each cupcake in lemon glaze and enjoy!
