Grain Free Chewy Almond Joy Cookies

I can't be the only one who did this, but every Halloween I would eat all of my candy in order from favorite to least favorite. I would start with the chocolate that I liked like Reeses and Hersheys, make my way to the fruity, chewy stuff, mindlessly eat a twizzler or two while I watched tv and then without fail at the bottom of the bag there were always two things: Almond Joy and Mounds. I don't know who told kids these are a disgusting and vial candy, but someone did and it spread far and wide. I made my way back around to them when I was way past my tick-or-treating days only to realize that THEY ARE DELICIOUS. Chocolate, coconut and almond together are a gift from the food gods and children don't know what they are missing out on! This combo is only made better by the addition of some flour and sugar to make it into a delicious, chewy cookie.

Grain free almond joy cookies are the perfect chewy chocolate chip cookie that reminds me of an almond joy bar, but with paleo ingredients. Made with almond flour and natural sugars.

Grain Free Chewy Almond Joy Cookies

Like a chewy chocolate chip cookie, but loaded with more flavor from the coconut and almonds.

  1. Combine coconut oil, egg, coconut sugar and vanilla in a medium-size mixing bowl
  2. Slowly fold in almond flour, salt and baking soda with a flat spatula
  3. Mix in coconut, almonds and chocolate chips
  4. Place the dough in the fridge to chill and firm up for 30 minutes
  5. Preheat oven to 350F and line a baking sheet with parchment paper
  6. Roll dough into 1.5inch diameter balls
  7. Place on baking sheet with lots of room to spread. Bake for 10 minutes
  8. Allow to cool on a baking sheet for 10 minutes and then transfer toa wire cooling rack
