Garlic and Turmeric Roasted Chicken

My approach to meal prep is not the standard make a few different set meals or dishes, package them into 5 different Tupperware and enjoy them all week. Truthfully, I wish I could be one of the people who did this, but I get bored. Instead I prep food ahead that I can easily use in a variety of different meals. This garlic and turmeric roasted chicken is a recipe I can use in many ways and avoid the standard meal prep boredom.  My approach to making this work for several meals is to make it at night and enjoy some for dinner with roasted veggies and save the rest for salads, sandwiches and bowls. 

One of my favorite simple meal prep items is this garlic and turmeric roast chicken. Great addition to an anti-inflammatory diet.

Garlic and Turmeric Roasted Chicken

  • Juice from 1 lemon
  • 2 tbsp Avocado Oil
  • 1 tsp Turmeric Powder
  • 1/4 tsp Himalayan Pink Salt
  • 1/4 tsp black pepper
  • 3 Cloves Garlic Thinly Sliced
  • 3 Boneless Skinless Chicken Breasts


  1. Preheat oven to 400F and line a baking sheet with parchment paper.
  2. Combine lemon juice, avocado oil, turmeric, salt and pepper in a mixing bowl until well combined. 
  3. Place chicken in a bowl and mix with sauce until well combined and chicken is well coated. 
  4. Place chicken on a baking sheet and bake for about 40 minutes depending on the thickness of the breasts.
  5. Remove from the oven and remove any garlic slices that are stuck to the breast.
  6. Slice and enjoy on its own, in salads or on a sandwich or wrap!
