Flourless Double Chocolate Mint Cookies

I can't be the only one who immediately gravitates towards the flourless item on any dessert menu. You know that whatever it is, it will be moist and rich and delicious. My friend Erin wrote a flourless almond butter cookie recipe for her blog Erin Lives Whole and that gave me the idea to make a flourless cookie with a nut butter base. I chose to make mine with cashew butter and a secret ingredient: Young Living peppermint essential oil!

If you've been following me for a while, you know that my love for essential oils runs deep. I diffuse them constantly, apply them topically and regularly make teas with them, but this was my first foray into essential oil baking and I was so impressed with the result! Just a few drops of the peppermint essential oil made this would batch taste like chewy thin mints! Flourless double chocolate mint cookies made with cashew butter, two types of chocolate and peppermint essential oil. These decadent paleo chocolate cookies are fluffy and chewy at the ssame time they are like a flourless cookie version of  a thin mint.

Flourless Double Chocolate Mint Cookies

Ingredients

  • 1 cup salted cashew butter

  • 3/4 cup coconut sugar

  • 1 egg

  • 1 cup chocolate chips separated

  • 1 tsp baking soda

  • 1/4 cup cocoa powder

  • 3 drops peppermint essential oil

Directions

  1. Melt 1/2 cup chocolate chips and allow to cool slightly.

  2. Combine cashew butter, coconut sugar, and egg in a large mixing bowl.

  3. Mix in melted chocolate chips, peppermint essential oil, cocoa powder, and baking soda. Mixture will stiffen up at the addition of melted chocolate so you may need to use some muscles to mix!

  4. Fold in second 1/2 cup chocolate chips.

  5. Place mixture in the refrigerator to chill and preheat oven to 350F.

  6. After dough has chilled for at least 30 minutes roll it into 1.5 inch balls and place on a baking sheet with at lease 2 in of space between each ball.

  7. Bake for 10 minutes remove from the oven and bang the sheet down to flatten the cookies and return to the oven for an additional 5 minutes.

  8. Allow the cookies to cool for 10 minutes on the baking sheet and then transfer to a cooling rack to cool fully.
