Crispy Maple Bacon Brussels Sprouts

When you think of thanksgiving I can assume green veggies aren’t the first thing that comes to mind. Let’s be honest they aren’t even the third, fourth or fifth thing that comes to mind, but I have grown to love having these crispy maple bacon Brussels sprouts on my plate for a little hint of green among the sea of beige.

My dad used to try to make us eat Brussels sprouts all the time when we were little kids and I absolutely hated them. Then I grew up and realized he was STEAMING them. No wonder I hated them! Try giving mini steamed cabbages to a little kid and see their reaction. I can promise it won’t be good. As I have grown and started cooking for yourself I realized there are two essentials for making Brussels sprouts not only palatable, but delicious: fat and salt. Then I found a third element: a little bit of sweet. These crispy maple bacon Brussels sprouts add all three so that your veggies won’t be overshadowed by the rest of the thanksgiving meal.

I certainly love the taste of Brussels sprouts now, but when I first started preparing them for myself I had to work on the consistency. The taste was there, but they somehow came out a little mushy no matter how I prepared them. After years of practice I have finally found the tricks to getting an evenly crisp sprout.

  1. Do not over dress. Toss the sprouts in oil so they are evenly covered, but not so much oil that it pools on the baking sheet.

  2. Line a baking sheet with parchment and place all of the Brussels sprouts face down like the image below.

  3. Leave the Brussels sprouts face down to cook the entire time. The top and bottom will crisp up evenly.

Yield: 6 servings

Crispy Maple Bacon Brussels Sprouts

prep time: 10 minscook time: 35 minstotal time: 45 mins

ingredients:

  • 1 1/2 lbs fresh Brussels sprouts
  • 5 strips of uncured bacon
  • 1 tbsp avocado oil
  • 1 tbsp maple syrup
  • 1 tsp salt

instructions:

  1. Preheat oven to 400F
  2. Cut base off of brussels sprouts and cut them in half
  3. Place in a large mixing bowl and drizzle with avocado oil and maple syrup. Toss in mixing bowl until all pieces are evenly coated
  4. Lay sprouts face down on a baking sheet and sprinkle with salt
  5. Place in oven to bake for 30 minutes. Leave sprouts face down the entire time.
  6. While sprouts are baking, cut bacon strips into 1" wide slices
  7. Cook in a large frying pan over low heat
  8. Once bacon is crispy, remove bacon pieces from the pan, but leave the grease
  9. Remove brussels sprouts from oven and heat bacon grease to med-high heat
  10. Add brussels sprouts to warm bacon grease and cook for about 3 minutes, tossing frequently. Be careful as you do this as grease may crackle and splash
  11. Turn off heat and add crispy bacon to the mixture. Best if enjoyed immediately!
