Chocolate Swirl Banana Bread

In an effort to keep this intro short and sweet… I have yet another banana bread recipe for you all! This time it is a chocolate swirl banana bread with a boost of collagen. It is grain free and dairy free, but still super moist (SO sorry for using that word) and delicious. I like to take collagen daily in my coffee, but its also fun to sneak it into recipes like baked goods!

  • 3 medium ripe bananas

  • 2 eggs

  • 1 tsp vanilla

  • 1/4 cup melted and cooled coconut oil

  • 1 tbsp maple syrup

  • 1/4 tsp sea salt

  • 1 tsp baking powder

  • 1.5 cups almond flour

  • 1/3 cup dark chocolate

  • 2 tbsp Collagen Peptides

  1. Preheat oven to 350F

  2. Mash bananas in a large mixing bowl until most lumps are gone.

  3. Beat eggs thoroughly in a smaller bowl.

  4. Add eggs, vanilla, coconut oil and maple syrup to bananas and mix all wet ingredients.

  5. Add sea salt and baking powder to wet ingredients.

  6. Slowly fold almond flour into wet ingredients with a spatula. Mix until the almond flour is thoroughly mixed in and there are no clumps.

  7. Melt dark chocolate in a small bowl and let cool slightly. While chocolate is still liquid, add 1/2 cup of the banana bread batter to the chocolate and mix thoroughly.

  8. Grease a loaf pan with coconut oil. Add half of the banana batter to pan. Then, pourin half of the chocolate mixture creating a smooth layer. Pour in the second half of the banana batter and finally, pour the rest of the chocolate mixture on top. Drag a knife back and forth through the pan to create the swirl.

  9. Place in the oven and bake for 45 minutes or until the top layer begins to brown. Let cool, slice and enjoy!!

This grain free chocolate swirl banana bread is super moist and decadent, but made with whole paleo friendly ingredients including collagen for an extra boost of protein.
