My girlfriend is usually very complimentary of my food, but the last time I made a breakfast casserole, it wasn’t her favorite. I knew I had to redeem myself with something extra tasty.

To make this recipe you will need some simple kitchen items starting with a 13x9 baking dish. Other than that grab a whisk, a frying pan, and a sharp knife. Before you get started cooking I highly recommend putting on your favorite podcast or playlist.

The ingredients you will need for this recipe are a dozen eggs, 1/2 lb of ground beef, 1/2 a yellow onion, and cheddar cheese. I use salt and pepper to season and avocado oil to cook. Be sure to spray your baking dish with avocado oil spray to grease it before you bake.

To make this cheeseburger breakfast casserole start by dicing 1/2 a yellow onion and cooking the onion in avocado oil in a frying pan over medium-low until soft and fragrant. Add the ground beef to the pan to brown and season with salt and pepper. Cook the ground beef over medium until cooked and set the onion and beef mixture to the side.

Spray a baking dish with avocado oil spray and crack 12 eggs directly into the pan. Whisk the eggs together and pour the onion and beef back into the pan. Spread the cheddar cheese on top and place in the oven.

How to cook Cheeseburger Breakfast Casserole

  1. Preheat oven to 400F
  2. Pour avocado oil into a frying pan over medium-low heat
  3. Add diced white onion to the pan and cook until soft and fragrant about 3 minutes
  4. Add 1/2 lb ground beef to the pan and break up with a spatula
  5. Season with salt and pepper and increase the heat to medium
  6. Continue cooking the beef and breaking it up into crumbles until browned
  7. Remove from heat and set aside
  8. Spray a 13x9 baking dishwith avocado oil
  9. Crack 12 eggs into the greased baking dish and whisk them together until fluffy
  10. Pour beef and onion mixture into the eggs and mix in with a spoon
  11. Season with salt and pepper
  12. Sprinkle cheddar cheese all over the top of the dish
  13. Bake in the oven at 400F for 30 minutes
  14. Cut into 12 individual squares and enjoy immediately or store in an airtight container in the fridge for up to 4 days
