Breakfast Meal Prep on a Budget
Want to meal prep a work week breakfast for less than $1 a day? If you’re following along with me on my instagram account, you know that I have been doing a grocery challenge and if you’re not I will explain it briefly here. I buy a weeks worth of groceries at a store and then buy that exact same list at a couple of other stores in order to compare the prices. During the first round I shopped the way that I normally do and I bought groceries at Whole Foods, Trader Joes, Aldi and Acme. The most shocking result from that round was that the Whole Foods haul was not the most expensive!
This round I am trying to see how much it costs to eat healthy and shop from stores that more people have access to. It has turned into a sort of grocery shop on a budget challenge. So far I have shopped at Walmart and Target and this week I will be shopping at Shoprite. Along the way I am also seeing how many meals I can get out of the weekly haul.
Last week I decided to prep a quick and healthy daily breakfast with the groceries from my haul. I usually prefer eggs over something sweet in the morning on work days so I made my favorite hard boiled eggs and a hash with cauliflower rice, kale and some tomato paste for flavor. After I was finished I thought, “hmm this probably didn’t cost too much to make.”
I grabbed my Walmart receipt and added up the cost of the ingredients and divided it by for servings and was shocked to see that it only cost $0.94 a serving!! It inspired me to share this with as many people as possible so that they can see that it can be super affordable to prep nutritious meals for work.
