Antipasto Bites
For most people the holidays might be cookie season, but for me its appetizer season! And I could not be more excited to share some of my favorites with you all including these super simple antipasto bites. I love an epic cheese tray, but its not always perfect for every party scenario. If you have a situation where you have passed hors d’oeuvres or just need a little bite, these are the way to bring a cheese tray into one little bite!

For Christmas I get lots of food gifts and I am sure you would not be surprised to hear that I absolutely love these food gifts, but last year I got 3 different cheese trays for serving things just like these little antipasto bites. They are so beautiful, but I feel like I need to have some kind of event to put them out for, but I am making the commitment to use them on a regular basis in 2019. Who says a regular Tuesday night can’t also be fancy cheese tray night!?
I have given the recipe for these antipasto bites below, but its honestly more like a formula that you could follow with any antipasto items. I even have my girlfriend thinking of new combinations like goat cheese and prosciutto for the next round. Stay tuned because this is the first of many holiday appetizer ideas I have coming out this season! I have so many swirling through my mind that I may have to have an appetizer only party sometime soon! Perfect chance to use another one of these. Antipasto Bites
ingredients:
- 8oz low moisture mozzarella cheese block
- 20 kalamata olives
- 20 pieces of salami
- 8oz roasted red bell pepper without skins (like this)
- 20 cocktail toothpicks
- Optional: infused olive oil (like this)
instructions:
- Cube mozzarella cheese
- Cut peppers into bite-size pieces
- Assemble bites by placing an olive on the toothpick then a folded piece of salami, then a red bell pepper and finally a cube of cheese
- Serve cold to your guests. Optional: drizzle with infused olive oil just before serving.
