I have to say I am one of those people who prefers the cookie dough when its raw over the baked cookies. Anyone else with me? I was pretty sure you would all love it too so I made these 5 ingredient cookie dough bites to get the taste of raw cookie dough in a healthy, paleo friendly dessert.

I used to be terrified to eat it because of raw eggs, but now I have raw eggs all the time in dressings and mayo. Either way I wanted to make an edible cookie dough with all vegan and paleo friendly ingredients that I could just pop in my mouth whenever.

I was determined to distill this recipe down to as few ingredients as possible. There are so many recipes out there that have chickpeas or other legumes in their cookie dough bites and I just did not want the hassle. I am so excited to share this simple recipe with 5 basic ingredients.

Part of the reason why I made these 5 ingredient cookie dough bites was because I made them on a day when it was just too darn hot to turn on my oven. There is something so wonderful about making a no bake treat in the warm summer months. Even thought it’s hot out, my sweet tooth does not take a break.

The first time I made these 5 ingredient cookie dough bites I ate it straight out of the bowl with a spoon before I could even get it into little bites. That’s how dang good it is. The second time I decided to coat them in a little chocolate shell and that really took them to the next level.

The third time I made these I used the chocolate as a drizzle on top. Basically, you can make them any way you would like. If you wanted to use this recipe to make a little dip for fruit or pretzels I think that would be incredible.

Beyond the fact that you only need 5 simple ingredients to make these cookie dough bites, it is also super quick and easy to put them together. Because you don’t need to use an oven or any sharp knives this would be the perfect recipe to get kids to help with.

I wanted you all to know just how easy it is to make this healthy, bite sized treat so I put together a little tutorial video to show you just how I made them. You can watch that 1 minutes tutorial video below.

Like I said, to make these 5 ingredient cookie dough bites you will need 5 basic ingredients. The ingredients you will need are finely ground almond flour, coconut oil, maple syrup, chocolate chips and sea salt. You will use the coconut oil and chocolate chips in the balls as well as on the drizzle.

The kitchen tools you will need for this recipe are a simple food processor, mixing bowl and possibly a squeeze bottle for drizzling chocolate on top if you want to get all fancy. Place almond flour, coconut oil, maple syrup and sea salt in a food processor and blend until a smooth mixture is left.

Then remove the blade from the food processor and stir the chocolate chips in with a spoon. Roll the dough into small balls and place on a lined baking sheet. Place the balls in the fridge and allow it to chill for at least an hour.

Melt chocolate and coconut oil together and drizzle over chilled balls. Take your bites to the next level and sprinkle some flaky sea salt on top. Store these cookie dough bites in an airtight container in the refrigerator.

Chocolate Topping

instructions:

  1. Add almond flour, melted coconut oil, maple syrup, and pink salt to a food processor
  2. Process ingredients until a smooth mixture forms
  3. Remove blade from food processor and stir in mini chocolate chips with a spoon
  4. Roll dough into bite-sized balls about 1.5" in diameter and place on a cookie sheet
  5. Place dough balls in the refrigerator for at least 1 hour
  6. When the dough is finished chilling, melt chocolate chips and coconut oil in the microwave or double boiler
  7. Pour a little bit of the melted chocolate over each ball and top the chocolate with pink salt
  8. Store in an airtight container in the refrigerator
