Ingredients
- 2 boneless skinless chicken breasts
- 1 1/2 cups ground pork rinds
- 1/4 cup coconut flour
- 2 eggs
- 1/2 tsp ground black pepper
Instructions
- Cut chicken breasts into small nugget like pieces
- Process pork rinds in a food processor until they are the texture of bread crumbs – if you don’t have a food processor you can place them in a large plastic bag and smash them
- Set up a breading station with coconut flour, pork rind bread crumbs, and two whisked eggs each in separate shallow bowls
- Bread each chicken piece by dipping it in coconut flour, then egg wash and finally press into the pork rind bread crumbs
- Spray your air fryer basket with spray oil and place breaded nuggets in the basket – depending on the size of your air fryer you may need to cook the chicken nuggets in more than one batch
- Preheat the air fryer to 400F and cook nuggets for 8 minutes or until the internal temperature of the nuggets reaches 165F
- Remove the chicken nuggets from the air fryer and allow them to cool slightly
- Enjoy immediately or store in an airtight container in the refrigerator for up to 4 days
