A few months ago I had only had Korean food a few times in my life, but now I have it at least once a week. My girlfriend and I fell in love with a Korean restaurant near her house and go there pretty much whenever we don’t know what to cook for dinner, but its not the easiest on the wallet so I came up with this homemade Korean chicken bulgogi meal prep. This way we can have one of our favorite Korean meals prepped and ready to go whenever!!

The spice level on this Korean chicken bulgogi meal prep is no joke! On the 1-5 scale that the Korean restaurant gives us this meal is a solid 4. That said you can easily adjust the spice to your liking. If you are cooking for children I would only use 1/2 a tsp or so. Many chicken bulgogi recipes call for gochujang paste, but almost every one has added sugars and oils that I like to avoid so I have been using Korean chili flakes which are a great ingredient, but pack a punch in the spice department!
This simple meal prep recipe for Korean chicken bulgogi comes together in no time at all. I don’t even marinade the meat ahead because it is full of flavor on its own. Just cube up some chicken breasts and toss in the spicy marinade. Then cut your zucchini into half moons. I like to cook my zucchini and chicken at the same time to save time, but in separate pans. Be sure to pour all excess marinade into the pan with the chicken. You will want to get that nice, sticky sauce coating all over the chicken.
