Ingredients
- 2 boneless skinless chicken breasts
- 2 bell peppers
- 1 red onion
- 1 tbsp chili powder
- 1 tsp salt
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 cup chicken broth or chicken bone broth
- Optional: 1/2 tbsp arrowroot starch
Instructions
- Cut bells peppers, red onion, and chicken into thin strips and add to the Instant Pot
- Combine chili powder, salt, cumin, oregano, paprika, cayenne, black pepper, and garlic powder in a small bowl
- Pour the chicken broth into the spice mixture and combine fully
- Pour the broth and spices into the Instant Pot and stir to combine all the ingredients
- Close the instant pot and set the vent to sealing
- Set the Instant Pot on manual for 8 minutes – the IP will come to pressure (about 10 minutes) and then cook
- After 8 minutes of cooking at pressure the Instant Pot will beep. Manually release the pressure and remove the lid
- If you want a slightly thicker sauce set the Instant Pot to saute and combine 1/2 tbsp of arrowroot starch with 2 tbsp of warm water, pour the mixture into the Instant Pot while stirring the fajitas
- Continue stirring for a minute or so as the sauce thickens
- Turn off the Instant Pot and enjoy on tortillas, rice or cauliflower rice
