Make roasted sweet potato buns for sandwiches and sliders

  1. Preheat oven to 400F and slice the sweet potato into rounds so that you have 1/2″ thick rounds. Place rounds on a baking sheet lined with parchment paper.
  2. Brush both sides of the sweet potato rounds with avocado oil using a basting brush and sprinkle the rounds on both sides with salt.
  3. Place in the oven and bake at 400F for 15 minutes, flip the rounds and bake for an additional 15 minutes. Allow the rounds to cool before using for sandwiches or burgers!
