Ingredients
- 1 medium shallot roughly chopped
- 1 cup loosely packed parsley leaves
- 2 tbsp lemon juice
- 1/2 cup white wine vinegar
- 1 tbsp dijon mustard
- 1 tsp salt
- 1/4 tsp black pepper
- 1 cup olive oil
Instructions
- Place shallot, fresh parsley, salt, pepper, dijon mustard, lemon juice, and white wine vinegar in a blender
- Blend on high until fully combined
- With the blender running on low, slowly pour the olive oil into the blender in a steady stream
- Continue blending until a smooth even dressing remains
- Pour into a jar to store and store in the refrigerator for up to 2 week
- Shake well before each use
