Cauliflower as a pizza crust? Decent! put a bunch of cheese in that and I am GOOD TO GO.
Cauliflower in a smoothie? SURE! I can mask that ish with lots of berries.
Cauliflower in my gnocchi? NO WAY. Makes it gummy and unpleasant.
When I think of gnocchi I think of puffy little clouds that combine two of my favorite things: potatoes and pasta. So when everyone jumped on the Trader Joe’s Cauli gnocchi train I was happy to jump right in. Turns out I wasn’t a fan and their recipe STILL had potato starch in it. This recipe only has 3 simple ingredients. It is grain free, dairy free and nightshade free and completely delicious. The ingredients i used were Japanese sweet potato, cassava flour and egg, but you can definitely use a standard sweet potato.
