Grain Free Chewy Chocolate Chip Cookies

Ingredients

  • 1 egg – room temperature
  • 1/3 cup melted and cooled coconut oil
  • 3/4 cup light brown sugar
  • 1.5 tsp vanilla extract
  • 2 1/4 cup almond flour
  • 1/2 tsp kosher salt 
  • 1/2 tsp baking soda
  • 3/4 cup chocolate chips
  • Flakey sea salt for topping

Instructions

  1. In a large mixing bowl whisk together coconut oil, light brown sugar, vanilla extract and egg
  2. In a separate bowl combine almond flour, salt, and baking soda
  3. Fold dry ingredients into wet ingredients with a spatula
  4. Fold chocolate chips into the batter with a spatula
  5. Cover the bowl and place in the fridge for an hour
  6. Preheat the oven to 350F and line a baking sheet with parchment paper
  7. Scoop out about 1/4 cup of batter per cookie, place on a baking sheet, and sprinkle with flakey sea salt
  8. Place in the oven and cook for 18-20 minutes
  9. Remove from the oven, allow to cool slightly and enjoy!
