Flourless Peanut Butter Brownies

A healthy, fudgry, grain free brownie recipe that is super easy to make!




  1. Bake or steam 1 medium-large sweet potato, remove skin, and cool
  2. Preaheat oven to 350F and grease a 8×8 baking pan
  3. Place sweet potato, maple syrup, peanut butter, coconut oil, and vanilla extract into a food processor
  4. Process until smooth and fluffy
  5. Crack eggs into the food processor and process again
  6. Add cocoa powder, baking powder, and salt into the food processor and process once more
  7. Process until all cocoa powder is incorporated into the batter – you may need to scrape down the sides of the food processor a few times
  8. Pour batter into the 8×8 baking pan
  9. If desired, drizzle more peanut butter on top
  10. Bake at 350F for 35 minutes
  11. Remove from the oven and allow to cool before cutting into 12 brownies
  12. Store in the refrigerator for up to 5 days or longer in the freezer
