Ingredients
Salad Ingredients
- 1 small red onion or 1/2 of a large red onion
- 1 medium cucumber
- 4 oz of feta in brine
- 8 oz cherry tomatoes
- 1/2 cup kalamata olives
Greek Salad Dressing Ingredients
- 1/4 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1/2 tsp black pepper
- 1 tsp dried oregano
Instructions
- Dice red onion into about 1/2″ squares
- Drain feta and cut into cubes
- Quarter or half cherry tomatoes depending on the size
- Slice kalamata olives in half
- Slice cumber in half and scoop out seeds with a spoon and then slice into half moons
- Combine all ingredients in a large mixing bowl
- In a small mixing bowl combine olive oil, red wine vinegar, black pepper, and oregano
- Pour dressing over salad and toss to coat all ingredients
- Chill in the refrigerator and store chilled
