Chinese Pork Lettuce Cups

Use this Chinese Pork Lettuce Cups recipe to make healthy and delicious pork lettuce wraps. Sauté ground pork with bell pepper, water chestnuts and simple seasonings.

So technically this isn’t a one pan meal because you brown the meat and cook the veggies in two different pans, BUT it all ends up in one pan at the end and couldn’t be easier to throw together.

In about 30 minutes these Chinese Pork Lettuce Cups come together for a satisfying whole30 or paleo one pan meal that is perfect for meal a meal prep session or a quick weeknight dinner.

Use simple seasonings to flavor these pork lettuce wraps

Chinese 5 spice is the addition to my kitchen spice cabinet that I never knew I needed. I purchased it on a whim and then worked backwards to find a recipe that I could use to highlight this incredible spice.

I had some ground pork in my fridge. So, I figured I could easily whip up a little lettuce wrap and use the spice for seasoning.

It is potent so a little goes a long way. This dish is also season with coconut aminos which I have been using to flavor so many things while I am avoiding soy on whole30 and honestly, I don’t know that I will even need to go back to using soy again.

This dish is lightly sweetened with pineapple juice. When purchasing pineapple juice during whole30 be sure to check that it is 100% juice and there aren’t any weird sugars or fillers added.

How to make pork lettuce wraps

To begin, add 1 tbsp of avocado oil to a large frying pan over medium heat. Add pork to the pan, season with salt and pepper and cook for 5-7 minutes until browned.

Then, add 1 tbsp of avocado oil to a large wok and saute chopped bell peppers, sliced mushrooms and drained water chestnuts over medium heat for 7 minutes tossing frequently.

Next, add browned pork to the wok with the vegetables. Combine pineapple juice, coconut aminos, sesame oil and minced garlic to make a sauce.

Finally, add sauce to the wok, mix and simmer for 10 minutes. Remove from heat and serve in lettuce wraps.

Ingredients

  • 2 tbsp avocado oil
  • 1 lb ground pork
  • 1 tsp crushed chile pepper
  • 1 tsp Chinese 5 spice
  • 1 red bell pepper
  • 8oz can water chestnuts
  • 1 cup sliced mushrooms
  • 1/2 cup pineapple juice
  • 2 tbsp coconut aminos
  • 1 tsp sesame oil
  • 1 tbsp minced garlic
  • Salt and pepper

    This recipe is SO easy and so delicious. I make this at least once a month. I had never heard of Chinese 5 Spice before making this, but it adds so much flavor! The water chestnuts add a great crunch. When I don’t have lettuce cups, I serve this over cauliflower rice.
