Description

Buffalo Chicken Bites are a Whole3o and paleo friendly version of traditional bonelss buffalo wings.

Ingredients

  • 2 boneless skinless chicken breasts
  • 2 eggs
  • 3/4 cup almond flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup of ghee (butter if not on Whole30)
  • 1/3 cup hot sauce

Instructions

  1. Preheat oven to 350F and line a baking sheet with parchment paper
  2. Cube chicken breast into bite size pieces
  3. Beat 2 eggs in a shallow dish
  4. Combine almond flour, salt and pepper in a separate dish
  5. Bread each chicken breast cube by tossing in the egg, then almond flour mixture
  6. Place each breaded chicken cube on the baking sheet
  7. Bake for 25 minutes and then remove the chicken from the oven
  8. Heat the ghee and hot suace in a frying pan over medium low until all of the ghee is melted
  9. Reduce the heat to low, mix the ghee and hot sauce together thoroughly and toss the chicken bites in the mixture until they are fully coated
  10. Remove the buffalo chicken bites from the pan and serve with celery and ranch
